Summer Fresh Mango Salsa


I know I'm not alone when I say I love summer. The sunshine, warm weather and (my favorite) fresh fruits and veggies! Sadly, my garden is non-existent this year, but I can still grab plenty of fresh produce at my local farmer's market. Including lots of the ingredients needed for this gem of a recipe!

While you could make this year-round, there's something about fresh tomatoes that livens up the flavor in any salsa recipe. Takes it to a whole new level, in my book.

Just look at all of those colors! It's almost too pretty to eat. Almost.

This is for sure another kid-approved recipe at my house. Even though my kids will all tell you they hate tomatoes, they LOVE this salsa! My 6 year old even discovered she likes red peppers!

The mango, lime and corn give this salsa a sweet flavor - but not overly sweet. It's not spicy at all either, although if you're craving a little zing, I don't see why you couldn't throw a little jalapeño into the mix.

We ate it with chips (which are a treat at our house...maybe that's why my kids were so excited to eat the salsa...), but you could eat it with whatever you like. Not gonna lie - I may have eaten some straight out of the bowl by itself. Yum. :-)

Summer Fresh Mango Salsa

1 red pepper (diced)

1/2 lb cherry tomatoes (diced)

1 avocado (pitted and diced)

1 red onion (diced)

1 mango (peeled, pitted and diced)

1 small can corn kernels

1 15 oz can black beans (rinsed & drained)

Dressing:

Juice of 2-3 limes

3 TBSP olive oil

Large handful of cilantro, chopped

Salt & Pepper to taste

Mix ingredients for salsa in a large bowl. Combine ingredients for dressing in a separate bowl and whisk together. Pour dressing over salsa and carefully stir. Serve immediately.
