Raspberry Smoothie Bowl


There's just something about starting your day off by eating fresh produce. It's almost as if the freshness wakes me up more. That's why I'm a HUGE fan of smoothies for breakfast in the AM. But if you've been on Pinterest lately (I have) maybe you've noticed the smoothie BOWL.

I keep seeing smoothie bowls - everywhere. And let me tell you - they. are. beautiful. Good food should be beautiful, right? So, I had to try one. And I'm happy to report I was not disappointed. :-)

I topped mine with chia seeds, chocolate (for breakfast?!? Yes, please!), coconut, mint and yes, even more raspberries. Because one cup of raspberries apparently isn't enough for me.

One of my favorite things about smoothies is being able to sneak in a ton of veggies - I'll be up front - this has no veggies. Unless you count the mint. Which I don't. :-) Having said that, there's no reason you couldn't throw some spinach in - it just won't have that pretty pink color. But sometimes a girl just wants to eat something pink, so no veggies today. I'll eat a salad at lunch. :-)

RASPBERRY SMOOTHIE BOWL

 

Ingredients:

2/3 cup of nut milk (I used Almond/Coconut)

1 frozen banana

1 TBSP almond butter

1 C raspberries

Put ingredients in blender and blend until smooth. Top with desired toppings, such as:

chia seeds

coconut flakes

mint leaves

dark chocolate

berries
